One Pot Dal!

Coming at you this weekend with a super simple soup recipe! This is my go-to legume dish. Lentils cook quickly and don't require any soaking, so this recipe can be whipped up with minimal effort. They are also extremely healthy! Low in calories, high in protein and iron, and packed full of other nutrients including B vitamins, zinc, magnesium, and potassium, lentils are an inexpensive way to create well-rounded meals. The best part? You can create this delicious dish waste free, and in just a few simple steps.

Ingredients:

  • Red or yellow lentils, 2 cups
  • Water or vegetable broth, 6 cups
  • Salt, 1 tbsp
  • Turmeric powder, 1 tsp
  • Freshly ground black pepper, 1 tsp
  • Coriander, 1 tsp
  • Garlic powder, 1 tsp
  • Paprika, 1 tsp
  • White pepper, 1/2 tsp
  • Cayenne, 1/2 tsp
  • Cinamon, 1/2 tsp
  • Ginger, 1/2 tsp
  • Nutmeg, 1/4 tsp

Tools:

  • Crockpot or large pot

Instructions:

If using a crockpot, add all your ingredients to your crock pot, and cook on high for 2-3 hours, or low for 4-6 hours. Stir your ingredients when you first add them in, and then stir occasionally throughout the cooking process. If you "set it and forget it," it is ok if you are unable to stir throughout the cooking process! Just make sure you get that initial stir in, and make it a good one!

If using a pot, bring your ingredients to a boil, and then lower to a simmer for 1 hour. Stir occasionally, scraping the bottom of the pot, as lentils have a tendency to burn to the bottom of the pot when left unattended on the stove.

Variations:

This recipe is ripe with possibilities! You can change it up by replacing 3 cups of liquid with coconut milk for a creamier result. You can also add fresh veggies like carrots, celery, onions, garlic, and even fresh ginger and turmeric to the mix! For the fresh veggie variation, I recommend sauteeing your onions, garlic, ginger, and turmeric in a pan with butter, ghee, or coconut oil if you're vegan. Once these veggies are soft, add your celery and carrots. Sautee until these veggies are soft and fragrant as well. Then, just add your sauteed veggies to the crockpot with the rest of your ingredients, and follow the same instructions listed above!
