Ingredients:

  • All-Purpose flour (4 cups or 17 oz)
  • Baking soda (1 1/2 tsp)
  • Baking powder (1 1/2 tsp)
  • Salt (1 1/2 tsp)
  • Butter (2 1/2 sticks or 1 1/4 cup)
  • Coconut sugar (1 1/4 cups or 10 oz)
  • Cane Sugar (1 1/4 cups or 8 oz)
  • Eggs (2 large)
  • Vanilla extract (2 tsp)
  • Chocolate chips (1 1/4 cups or 12 oz)

Tools:

  • 2 Large mixing bowls
  • Measuring cups and spoons
  • Sheet pan
  • Electric mixer
  • Parchment paper
  • Spatula
  • Spoon for scooping
  • Container for dough
  • Wire rack

Instructions for Success:

Take out your butter one hour (if you live in the sunshine state) or more (if you don't) before you start making your cookies, so it softens.

Mix your dry ingredients in one mixing bowl and set aside.

Use your electric mixer to cream your sugar and softened butter. Do this for five minutes or longer, creating a whipped and airy texture. Add your eggs and mix well. Lightly mix in your vanilla extract.

Slowly add in your dry ingredients, incorporating them with your mixer at a low speed. Try to mix as little as possible - the less you work your dough, the better! Just make sure all your flour is incorporated.

Press your dough into a large container that seals well. Refrigerate before baking for at least 24 hours or up to 72 hours for best results, or just bake them for decent results! This dough also freezes well, but use it within 3 months.

When you're ready to bake, preheat the oven to 350 degrees Fahrenheit. Scoop large mounds of dough onto a baking sheet lined with parchment paper. I use a tablespoon to scoop my dough, and each doughball ends up being between 1.5 and 2 tablespoons depending on how I'm feeling. Just try to stay consistant with the sizes for each batch, so they bake evenly!

Bake your cookies for 18-20 minutes, depending on how big you decided to make those scoops.

Variations for your taste:

You can add a subtle change in flavor by adding 1-2 teaspoons of cinnamon. Try adding ingredients other than or in addition to your chocolate chips! Just make sure your total amount of additions adds up to 1 1/4 cups. For example, you might add 1/2 cup chocolate chips, 1/2 cup raisins, 1/4 cup oats, and 1/4 cup nuts or seeds.
