Sesame Honey Bars, a.k.a. Pastelis

Try this authentic Greek recipe called Pastelis, brought to you by Jen from Hani Honey! It is known historically as a "Healthy Energy Bar." Loaded with nutritious ingredients that contain vitamins, minerals, good fats, and honey, and amazing complex sugar ingredient that is Keto AND Paleo friendly. And wait, did I mention that they are delicious?

Ingredients:

  • 3/4 cup honey (I'm using Chai Spice Hani Honey for this batch!)

  • 1 cup sesame seeds

  • 1/4 cup sunflower seeds

  • 1/4 cup chopped almonds

  • 1/4 cup pumpkin seeds

  • 1/4-1/2 dried fruit like raisins, chopped dates, and figs (optional)

  • Coconut oil for greasing

  • Parchment paper Prep time: 15 minutes

Instructions:

  1. Lay out 2-2' sheets of parchment paper, and coat with coconut oil on one side of each.

  2. Pour honey into a sauce pan that can hold all ingredients, and heat on medium until it bubbles. Then, remove from heat immediately!

  3. Stir in seeds, nuts, and dried fruits (if using) until all ingredients are well-combined.

  4. Transfer the contents of the pan to one of the oiled sheets of parchment paper.

  5. Cover with the other sheet of parchment paper, oiled side facing the Pastelis. Use a rolling pin to press the Pastellis down and flatten to approximately 1/4" thick.

  6. Carefully remove the top piece of parchment paper, and let sit for 15 minutes. Cut the mixture into bars, and refrigerate the bars for a few hours before serving.
